All Purpose Healthy Everyday Salsa’s

I am a big fan of a home-made salsa, they can have so many purposes – as a dip, as a garnish, as a topping, as a sandwich filling… the uses are almost endless.

Time and time again I find myself using these two salsa’s and as such, I thought that I would quickly write-up their recipes so that you too can use them in as many ways as I do.

They are both Mexican themed, however, both can be used with different cuisines separately… and indeed, together!

Avocado Smash… not quite Guacamole

Great as a topping on most Mexican dishes, a spread on sandwiches and wraps or a dip with some carrot sticks.

Avocado Smash Salsa Recipe
Ingredients:
  • 1 Ripe Avocado – $2
  • 1/2 Lemon – $0.60
  • Dash of Olive Oil – If you don’t have any in your hostel, leave it out
  • Salt & Pepper – free packets from McDonald’s
Instructions: 
  • Scoop out the contents of the Avocado into a bowl
  • Squeeze in the juice of half a lemon
  • Add a dash of olive oil (makes it smooth)
  • Smooth together with the back of a fork (I leave some chunky bits as I like a varied texture)

  • 1 bowl
  • 1 fork

Tomato Salsa with Coriander/Basil Recipe

Great as a dip with corn chips, topping on Mexican dishes, throw in pasta sauces or over the top of seafood.

Ingredients:
  • 3-4 Tomatoes – $1.80
  • 1/2 Red Onion – $0.60
  • Juice of 1/2 a lemon – $0.78
  • Bunch of Herbs – Basil for Italian themed meals, Coriander for Mexican themed meals or Parsley for those in-between genres – $3.98
  • Splash of olive oil
  • Salt and pepper
Instructions:
  • Dice the tomatoes as finely as possible, then smoosh them with the back of your knife
  • Dice the red onion finely
  • Finely chop the herbs
  • Put all ingredients – including salt, pepper and splash of olive oil, in a bowl and mix
Equipment:
  • Chopping board
  • Sharp knife
  • Bowl
