HIKING UPDATE: so the last couple of months has be HIKING UPDATE: so the last couple of months has been a whirlwind of emotions. 

At the beginning of October Kosciusko National Park had closed off a huge portion of the park which the Alpine Walking Track I was planning on doing ran through. To say I was devastated is an understatement, but I also understood that the rangers needed to make sure that the access roads are clear and that the vegetation is safe and protected. 

After a couple of weeks of moping I finally started planning an alternate hike. I decided to to reduce my annual leave to just one week and do two hikes one still in the Mt Kosciusko national park (the part that was open) and one on the coast... mountains and beach!! Woohoo

Then last week the Kosciusko National Park rangers reopened the part of the park that the Alpine Walking Track goes through. 😱

Oh my. So many options. 

But I had lost weeks of planning and training... so I was nervous. And I had reduced my annual leave, so would have to reapply. I was in a bit of a flap trying to work out what to do. 

But all that stress was for nothing, as on Thursday last week something came up at work, that I needed to be there for. So I had to cancel my leave all together 😢😢

So my big hike is not happening in 2020, but it’s still happening. I just need to find the right time to do it in 2021 #classic2020

DAY TWO #lighttolightwalk - we started super early DAY TWO #lighttolightwalk - we started super early... because a wild pig had tried to get into our tent in the wee hours of the morning. That got our adrenaline up. 

So we hit the track, arriving at our campsite long before lunch time. We lolled about on the grass for a while, ate some food and then decided to push on to the end. We walked 18kms in total, and loved every bit. 

If I did it again, I would push hard on the first day to get to the second campsite, as the swimming spots there were the best. Then have a slow day on the second day. 

Or take the full three days to do it... the scenery is spectacular.

Have you ever seen an echidna in the wild before? Have you ever seen an echidna in the wild before? I certainly hadn’t until today. Can you believe I saw this guy, right next to my walking track in the middle of Sydney. To be fair that part of the track didn’t feel as though it got many visitors. Check out what else I saw in my stories. 

Also, did you know that echidnas are monotremes... which means they lay eggs but also suckle their young. The only other monotreme is the platypus 🤓

It’s 39 degrees at 10am... so snorkelling is my It’s 39 degrees at 10am... so snorkelling is my way of cooking down. So loads of grouper fish, a stingray, sea urchins and lots of teeny tiny fish 😍 If you are in Sydney, I hope you are staying cool today.

It’s only 6 weeks until I start my big hike that It’s only 6 weeks until I start my big hike that will last for two weeks. Luckily, I have great friends who are happy to come out bushwalking with me to help me train. 

This bushwalk wasn’t on any google searches that I did before our weekend escape to Scone. Instead we asked at the local information centre and were recommended this track. It was amazing. Epic. Totally recommend checking in with the Murrurundi information centre if you are travelling this way.

Some days I just marvel at the beauty of the Austr Some days I just marvel at the beauty of the Australian countryside. So often the bush land melds in with the farm land creating an almost wild and untamed look. So different to the expectation of picturesque pastures that are usually depicted as countryside. I just love it.

I’m pretty much never fall in now... when I star I’m pretty much never fall in now... when I started stand up paddle birding I spent more time climbing onto the board than standing on it. It may be due to the work I have been doing with my awesome PT (@tegan_kidger) as it’s all about abs and butt muscles. Or it may be that I no longer over think it - when you have fallen in a 100 times, it no longer bothers you, so I have found that I am so much more relaxed.

I call this my Caribbean inspired lobster salsa! A I call this my Caribbean inspired lobster salsa! At the moment lobsters are really cheap in Australia because we haven’t been able to ship them around the world. 
This dish could feed four as an entree or two as a main with some salad as well. 

Ingredients: 
X2 Australian lobster tails
1 red capsicum 
1 mango (these are in season right now and soooooo delicious) 
1 lime
1 red onion

Steps:
1. Roughly chip the capsicum and onion, sprinkle with oil and salt and pepper. Cut up the mango and place in a bowl to inside for later. Sprinkle olive oil, salt and pepper on the lobster tails. 

2. Heat up your bbq. First start cooking the capsicum and red onion, as they take a little longer. When they are starting to get a little char to them, add the lobster tails, shell side down to the bbq. 

3. When the lobster tail shells start to change to a red colour and the meat is starting to looked cooked, flip them over so that the meat is face down and gets a nice char. 

4. Take everything off the bbq and roughly dice it up (taking the lobster out of the shells). Add it them all to the mango and then squeeze over half a lime. 

5. Eat

Hello, I’m Helen, AKA The Lite Backpacker – an Australian with an English accent (thanks to having one English parent) on the 30 side of my 20s.
